Learning to Love Salads

One of the best things I did, was to find a salad I really liked. It had to be easy to make, easy to eat, filling, great flavor and a variety of textures. Chopping up everything in the salad was the trick for me. I love how you get a variety of flavors and textures in each and every bite. It also makes it super easy to eat when you aren't trying to fold big leaves into your mouth with your fork!

 This is my current favorite, I love the crunch the nuts add and the bright flavor of the goat cheese and pomegranate.

Megan’s Meal Salad:

  • Chopped Greens: arugala, spinach, kale & chard, baby greens are less bitter.)
  • Chopped veggies: Broccoli, celery, carrots, bell pepper
  • Pomegranate seeds
  • Rotisserie or baked chicken
  • Goat Cheese
  • Pistachios & Chia seeds
  • Dressing: 1/3 balsamic vinager 2/3 Extra Virgin Olive Oil

I swear, I love this one so much, I even eat it for breakfast some days! You can swap in different proteins, seasonal greens, veggies, nuts, seeds and fruit.

A note on fruit, do take it easy there. Blueberries and raspberries are the lowest sugar and so good for you. However many fruits are high sugar and will spike your glucose.

 For my dressing, I use Trader Joe’s premium EVOO, (Extra Virgin Olive Oil) and their Organic Balsamic Vinegar. The oil is a decent price for what you get and comes with a pour spout too. 

I never imagined such a simple dressing could taste so good!

If you have a store by you that sells olive oils and balsamic vinegars, it can be fun to go in and taste to see how different the can be.

For the dressing, I got this little flask off amazon that makes it super easy to get the right ratio of olive oil to vinegar. 

Lastly, remember that you need fat with the veggies to get the most benefit. Olive oil is also an anti-inflammatory food, so enjoy it!

The Pavillions grocery store by me, has rotisserie chicken that has been removed from the bone and is in an easy to use tub in the deli. I can usually get one that was baked the same day, so I know it is fresh.  

Have fun with this! Put on great music when you are making it and enjoy the process of doing something really great for yourself.

You can even prep for 2 or 3 days to easily throw together a fantastic meal in a few minutes.
